Mexican food has always been my favorite, and I would love to share some of my favorites I have made with you. This week, salsa is the star! There are many different ways to whip up a batch of salsa, and the ingredients can vary from anything from tomatoes and cilantro to strawberries and apples! <span class="Apple-style-span" style="font-family: Times, "Times New Roman", serif;">1 can (28 Ounce) whole tomatoes with juice (I drained some of the juice)</span><br />
<span class="Apple-style-span" style="font-family: Times, "Times New Roman", serif;">2 cans (10 Ounce) Rotel</span><br />
<span class="Apple-style-span" style="font-family: Times, "Times New Roman", serif;">¼ cups chopped onion</span><br />
<span class="Apple-style-span" style="font-family: Times, "Times New Roman", serif;">1 clove garlic, minced</span><br />
<span class="Apple-style-span" style="font-family: Times, "Times New Roman", serif;">1 whole jalapeno, quartered and sliced thin (less if you're not a heat fan)</span><br />
<span class="Apple-style-span" style="font-family: Times, "Times New Roman", serif;">¼ teaspoons sugar</span><br />
<span class="Apple-style-span" style="font-family: Times, "Times New Roman", serif;">¼ teaspoons salt</span><br />
<span class="Apple-style-span" style="font-family: Times, "Times New Roman", serif;">¼ teaspoons ground cumin</span><br />
<span class="Apple-style-span" style="font-family: Times, "Times New Roman", serif;">½ cups cilantro (or more to taste!)</span><br />
<span class="Apple-style-span" style="font-family: Times, "Times New Roman", serif;">Juice of 1 lime</span><br />

<span class="Apple-style-span" style="font-family: Times, "Times New Roman", serif;">Combine whole tomatoes, Rotel, onion, jalapeno, garlic, sugar, salt, cumin, lime juice, and cilantro in a blender or food processor. Pulse until you get the salsa to the consistency you’d like—I do about 10 to 15 pulses. Test seasonings with a tortilla chip and adjust as needed.</span><br />

<span class="Apple-style-span" style="font-family: Times, "Times New Roman", serif;">1 (15 ounce) can black beans, drained and rinsed well </span><br />
<span class="Apple-style-span" style="font-family: Times, "Times New Roman", serif;">1 (15 ounce) can whole kernel corn, drained well </span><br />
<span class="Apple-style-span" style="font-family: Times, "Times New Roman", serif;">½ medium onion finely diced (about 1/3 cup) (I like red onion better)</span><br />
<span class="Apple-style-span" style="font-family: Times, "Times New Roman", serif;">½ cup finely chopped fresh cilantro </span><br />
<span class="Apple-style-span" style="font-family: Times, "Times New Roman", serif;">1 (7 oz.) can salsa verde (I used Embassa brand) </span><br />

Let the salsa marinate for a few hours (or overnight before serving). Drain most of the liquid from the salsa before serving. Serve with tortilla chips.</span><br />

<span class="Apple-style-span" style="font-family: Times, "Times New Roman", serif;">1 can black eyed peas (or black beans), drained </span><br />

Now, I am throwing it in my dips! Avocados are definitely affordable this time of year, so I thought it was a good opportunity to try this yummy recipe finally. It turned out very yummy, and were great with <a href="http://myrecipeboxx.blogspot.com/2012/04/italian-pita-chips.html">these pita chips</a>. </span><br />

Melt the chocolate in the microwave, and then hold the bears head while you dip the body. I love them because you can wear them in the spring and summer with no socks or in the winter and fall with socks and they work! The knickers were made from a lightweight cotton (we do live in Las Vegas, so I wanted to make sure my daughter could wear them year round!). I added the button detailing on front to give it more of a vintage feel and they ended up being one of my favorite details! It is a very simple shirt, but by far my favorite detail is the pleating detail I put on the shoulder. Last we have a sweet little vest. I knew I wanted to pleat the bottom and by lining it in a contrasting fabric, you can catch little glimpses as she moves..love that! This was made from a t shirt pattern. I left off the sleeves and then cut the front right down the middle and then made the new shape! </div><div align="center"><br />

This first yummy recipe is a copycat from a place called Rumbi Island Grill, which you can only find in Utah, Colorado, Arizona, and Nevada. Being in Ohio, it's not easily accessible when I have a craving! It's a good thing I've found some great copycats to fulfill my craving, this one included. I have made it 4 or 5 times now, and it is delicious (and figure friendly). The recipe looks long, but don't let that intimidate you, it comes together really easy :)<br />

</div><div style="text-align: center;">In remixing the pattern, I kept the skirt base the same, but added large scallops along the bottom. The skirt is made from a denim and lined with a cotton, which made the scallops so easy to make. You will laugh when you hear how I do things sometimes. (My husband laughs a lot!):) To make the scallops, I searched my house high and low for every circle we had and found the perfect bowl that fit the size scallop I needed to make an even amount of scallops. Unconventional? Certainly. Did it work? Yes, it did! I made a simple band for a waistband with a plain front and added elastic to the back. 2" suspenders were made and attached in the back, criss crossed and then snap close in the front. The large buttons were must haves for me (I even had them in my original sketch!) And lastly, we have the fox pockets. I LOVE foxes right now and the love of them were my main inspiration for this skirt. I gave them two small pleats at the shoulder (which I am in love with..like I need to make ME one!). I added a ruffle around the neck. </div>i have been obsessed with polka dotting lately because the technique is so simple! just place a small dot of polish on some paper, dip your toothpick in, and get polka-dotting. finishing with a top coat makes polish and polka dots smooth, so make sure you don't forget that step.<br />

PAM Original No-Stick Cooking Spray<br />
1 cup shredded part-skim mozzarella cheese (1 cup = 4 oz)<br />
1/4 cup chopped fresh basil leaves<br />

Cook ravioli according to package directions. Meanwhile, heat spaghetti sauce and meatballs in medium saucepan over medium heat 5 minutes, or until hot. <br />

Spray 13x9-inch baking dish with cooking spray. Drain ravioli; place in even layer in prepared dish. Ladle meatball sauce over top; sprinkle with cheese. Cover with foil. <br />

spring is here and so is color! now is the time to ditch the grays and blacks of winter and introduce the pinks, greens, and blues of spring. <br />
i put together a couple ensembles that you will probably see me prancing around in for the upcoming months. note that several items are from my personal favorite, Target. Target is the store for seasonal "trend" items that you are not interested in investing a lot of money on. every summer i stock up on their five dollar tees and grab a few cardigans for versatility. this year they have AMAZING colored denim, (colors identical to the ones at Nordstrom) for a great price. save your money and spend it on items that you will wear over & over, like a nice pair of sandals or a gorgeous set of earrings.<br />

Then drizzle remaining half of melted chips over popcorn, and gently stir mixture until evenly coated (don't over stir though or your sprinkles wont stick if the white chips begin to set and harden). Pour mixture into a single layer onto wax paper. Sprinkle entire mixture evenly with sprinkles before vanilla chips set. It took me about 20 minutes to paint it and about 10 more to dry. I know this isn't for all jewelry, but a fun way to take an item that is cheaper and not so unique and turn it around to something really fun to wear.</div><div align="center"><br />

For those of you who are not members of the <a href="http://mormon.org/"><span style="color: #76a5af;">Church of Jesus Christ of Latter-Day Saints</span></a>, one time a year, all of the young women of the church (ages 12-18) and their mothers come together for a meeting specifically with the General Young Women's presidency and the First Presidency to hear messages of faith and to feel inspired. </div><div style="text-align: center;"><br />

It seems almost everyone I come across eats about the same meal...ham, potatoes, deviled eggs, and some sort of fab dessert (i.e. carrot cake). For whatever reason, there are always leftovers galore and sometimes ham sandwiches for days just get boring@ Over the last few years I have been trying to find good uses for my leftover eggs and ham and have tried a few yummy recipes to share with you. </span><br />

<span class="Apple-style-span" style="font-family: Times, "Times New Roman", serif;">First off, I wanted to share a few tips on hard boiling eggs. This is the best way I have come across and have no issues peeling my eggs....</span><br />

How To Hardboil Eggs<br />
<br />
1. Put the eggs in a single layer in a saucepan, covered by at least an inch or two of cold water. Starting with cold water and gently bringing the eggs to a boil will help keep them from cracking. Adding a tablespoon of vinegar to the water will help keep the egg whites from running out of any eggs that happen to crack while cooking, but some people find that the vinegar affects the taste. I don't have a problem with it and I usually add a little vinegar. Adding a half teaspoon of salt is thought to help both with the preventing of cracking and making the eggs easier to peel. Put the burner on high and bring the eggs to a boil. As soon as the water starts to boil, remove the pan from the heat for a few seconds.<br />
<br />
2. Reduce the heat to low, return the pan to the burner. Let simmer for one minute. (Note I usually skip this step because I don't notice the eggs boiling until they've been boiling for at least a minute! Also, if you are using an electric stove with a coil element, you can just turn off the heat. There is enough residual heat in the coil to keep the eggs simmering for a minute.)<br />

3. After a minute, remove the pan from the heat, cover, and let sit for 12 minutes. If you are doing a large batch of eggs, after 10 minutes you can check for doneness by sacrificing one egg, removing it with a slotted spoon, running it under cold water, and cutting it open. If it isn't done, cook the other eggs a minute or two longer. The eggs should be done perfectly at 10 minutes, but sometimes, depending on the shape of the pan, the size of the eggs, the number of eggs compared to the amount of water, and how cooked you like them, it can take a few minutes more. When you find the right time that works for you given your pan, the size of eggs you usually buy, the type of stove top you have, stick with it.<br />
<br />
I also find that it is very hard to overcook eggs using this method. I can let the eggs sit, covered, for up to 15-20 minutes without the eggs getting overcooked.<br />
<br />
4. Either remove the eggs with a slotted spoon and place them into a bowl of ice water (this is if you have a lot of eggs) OR strain out the water from the pan, fill the pan with cold water, strain again, fill again, until the eggs cool down a bit. Once cooled, strain the water from the eggs. Store the eggs in a covered container (eggs can release odors) in the refrigerator. They should be eaten within 5 days.<br />

Divide into each pie crust.Mix eggs, half and half, and parsley. Pour over pies. Place pies in oven and bake 45-50 minutes or until tops are puffed and golden brown. Let stand 5-10 minutes. I love grabbing any kind of notebook and my black felt tipped pens and draw away. I love sketching out project ideas, quotes, real life as it is happening and sometimes I just like to doodle.
